Also known as Mexican Wedding Cookies

This is something I haven’t done in a long, long while, Baking!!! When I was in my mid twenties, a couple of months ago, Lol, I used to do a lot of cooking and on occasion even baking. I had to, to survive in the Big Apple. I was single and didn’t have anyone to cook for me. Later, after I got married I continued, but not as much.

Most of what I cook today are breakfast meals. Some I turn into Tacos. Actually, anything you like can be turned into a Taco. That’s how I gained so much weight, especially during this pandemic. In searching for something to cook for the Wine & Dine hour, I found a recipe that sounded like something I had tasted in the past at weddings or birthday parties and yes, especially during these holidays. I’m not sure where or who came up with this recipe. I got it from the internet. The recipe comes from Ms. Tapia’s mother who got from a TV program in the 1950’s in New Jersey. The recipe was mainly intended for weddings. So here goes.

Mexican Wedding Cookies

What makes these cookies so tasty? It’s all, partly, the half pound of butter, to start off with. You then add confectioner’s sugar, your walnuts or pecans, your choice, flour, cinnamon and more confectioner’s sugar sprinkled on both sides when done. I decided to make a change by adding a maraschino cherry in the middle just for color and more Christmas like. You really don’t have to follow every recipe the way it is written. You can add or experiment with or use your own creative imagination. Just by adding one or two changes, it can become your own. Recipes are like guides. Then leave the rest to your imagination. Have fun with it.

INGREDIENTS:

  • Half pound of butter (two sticks)
  • 7/8 cups of confectioners’ sugar
  • 1 ½ cups ground walnuts or favorite nuts
  • 2 cups of flour
  • ½ tsp of cinnamon
  • 1 extra cup of confectioner sugar for final sprinkle
  • maraschino cherry or your favorite berry

INSTRUCTIONS:

  1. Cream butter and 7/8 cups of confectioners sugar together until well mixed
  2. Add walnuts or your favorite nut, cinnamon, and the flour.
  3. Mix well and form into a log. Then, wrap the log in plastic and chill.
  4. When well-chilled (one hour in the fridge), cut in slices ¼ inch thick.
  5. Place on greased cookie sheet (or parchment lined baking sheet if you hate clean up like me)
  6. Press thumb in the center of each slice to form a ring
  7. Bake for 12 mins in a 375-degree oven
  8. When done, sprinkle well with both sides with confections sugar
  9. Just to give it some color, I put in the middle of each cookie a maraschino cherry – you can do the same or add your favorite berry if you like.

So there you have it. Something sweet and very tasty paired with one of my wines. A Pinot Noir Fine Wine direct from the vineyards in Napa Valley California at a tremendous discount. As a member of the Wine of The Month Club, I receive my wine directly to my door. This is also a great gift idea. You know how every year we accumulate cans from the fruit cakes or even plastic coffee cans.

I recall from years past my mother would make cookies and small fruit cakes, wrap them up, put them in small cans and tie a nice ribbon and give them to friends and family during hard times. It’s the thought that counts. Just put 8 or 10 cookies using saran wrap. Use Christmas paper and tie a festive ribbon with a name tag. Give them to your friends at work or neighbors and family.
